The successful candidate must be able to work as part of a team that will be operating a sturgeon meat and caviar processing plant as part of a commercial demonstration sturgeon program located at the Mote Aquaculture Research Park, Sarasota, Florida. This program operates state-of-the-art technologies that produces commercial quantities of sturgeon meat and caviar. Duties for this person will include but not be limited to the following: - Oversee the operation of a facility that can process 75 tons of sturgeon meat and 4 tons of caviar annually. - Be responsible for all aspects of the processing facilities operations including production planning, fish and caviar processing, inventory control, packaging, personnel, shipping, and receiving, customer service and sales promotion. - Establish and maintain pertinent quality control standards and policies. - Follow and modify as necessary all operating procedures. - Follow and modify as necessary all SOP, SSOP, and HACCP food safety procedures. - Ensure compliance with all local, state, and federal rules and regulations. - Assist in developing innovative processing and packaging methodologies. This is a hands-on position. The successful candidate for this position will have prior fish processing management experience. Computer skills, familiarity with computer spreadsheets and word processing programs are required. Caviar processing experience is a plus but not required. This position requires a valid Florida Drivers license. This position includes a full benefits package. Salary for this position is dependant upon qualifications and experience. Working hours for this position are generally 8:00 am to 5:00 pm with 1 hour for lunch but the start/stop times and days worked may be staggered to enhance operational efficiency. Longer hours may be required.
